Island Fritters: A wild treat the natives will love!

INGREDIENTS:
1 Wind & Willow Mango Tango Cheeseball Mix
Complete Pancake Mix: just add water
Pineapple Rings
1 1/2 tbs. fruit juice
vegetable oil

DIRECTIONS:
Make Pancake Mix as directed. Stir in Coconut Topping from Mango Tango Cheeseball Mix. Heat about an inch of oil in a pan you will use for frying fritters on medium heat. Pat the pineapple rings with a paper towel to dry them off a bit. Dip in pancake batter and place in oil. Turn when brown. When both sides are brown remove from oil to a plate with a paper towel on it to drain off any remaining oil. Let cool for a couple of minutes before drizzling icing on fritters. To prepare icing simply use 1 1/2 tbs of juice and mix with Mango Tango Mix.
